Cooking Instructions

Cook bacon and set aside. Soak up most of the grease with a paper towel or use EVOO

Slice grape tomatoes

Slice mushroom
- 4
Add to pan and cook down

Slice red onion and potatoes. Be sure to slice potatoes small so they cook faster!

Add to pan with salt, pepper and oregano. Mix through and cover.

Continue to mix and cover until completely cooked. Check potatoes to make sure it's done and serve.

Hints: if you use EVOO then add salt at beginning. If you use bacon grease skip salt until you add potatoes and onion. You can even skip it then if you want.

Hint 2: if you don't have time in the am, you can slice onion and potatoes ahead and keep them (separately) in water until you cook them.

*To anyone following my recipes---Remember that "debris" I harvested from my pho soup.... delicious, well spiced gelatinous fat and bits of meat. It smelled like a corn beef pot roast a bit. So I thought, potatoe, onion hash, left over brisket, cheese with an egg on top. A great way to make the delicious flavours of my pho be reborn as this breakfast brainstorm.
