Ingredients

2 servings
  1. Cooked chicken and 1/2 cup chicken broth
  2. 10medium Potatoes
  3. 1medium diced onion
  4. 3diced carrots
  5. 4scotch bonnet
  6. 2red bell pepper
  7. Garlic and ginger paste
  8. Seasonings
  9. Oil
  10. Curry powder, black pepper

Cooking Instructions

  1. 1

    Peel and dice the potatoes. boil the potatoes until they are soft (not too soft)

  2. 2

    In a heated pot add in small amount of oil,diced onion and carrots, garlic and ginger paste, blended scotch bonnet and red bell pepper and stir fry for 5 minutes.

  3. 3

    Add in the cooked chicken, chicken broth, seasonings, curry powder, black pepper and allow it to cook for 3 minutes.

    Add in the potatoes and allow it to cook for another 5 minutes then turn off the heat.
