When my nan comes over she always makes these. They are commonly eaten in Barbados where she is from. Her cooking is my favourite and my cooking style has largely been inspired by her. She would allow me to watch her cook and when I was able to, let me cook with her which is where some of my fondest memories and passion for food comes from. This is my favourite breakfast to enjoy I hope you enjoy it too. ♥

Ingredients

  1. 4 cupsall purpose flour
  2. 4 1/2 tspbaking powder
  3. 1 cupsugar (preferably brown granulated)
  4. 1 tspsalt
  5. 1 1/2 tspcinnamon
  6. 1 tspallspice (sweet)
  7. 3 cupswarm water
  8. Oil for frying (tasteless oil like vegetable oil or canola oil)

Cooking Instructions

  1. 1

    Mix together all the dry ingredients until combined

  2. 2

    Add the warm water and mix until a thick batter is formed.

  3. 3

    Heat up the pan on a medium heat and cover the bottom with oil

  4. 4

    Use a large tablespoon to scoop in the batter. Fry until golden brown on both sides.

  5. 5

    Serve with beans, fried eggs, plantain and turkey rashers (optional)

I tried this recipe for my daughter to bring to her high school for spirit week & they were a huge hit. I'll definitely make them again soon.
