Gizdodo is a simple side dish that is often served with rice; especially Jollof rice. It is easy to deduce from the name that this meal will be basically made of gizzards and ripe plantain.
Hence Gizdodo (Gizzard & Dodo) and we all know that dodo is just another name for ripe plantain.

    Remove plantain peel and dice into 2 or into 4; heat up veg oil and fry plantain, remove from oil once it’s brown and drain inside paper towel then set aside

    To steam the gizzard, add chopped onions, pepper, garlic and ginger; then add salt and stock cube with any seasoning of your choice; do not add water

    Cook Gizzard and remove from heat once it’s cooked through, drain any excess water

    Heat up oil and fry gizzard; remove once it’s fried and brown, sieve and reduce the oil, place pot back on heat and add the diced onion, tomatoes and tatashe; allow it fry for about 5 minutes

    Add stock and salt, stir in dried herbs and then add gizzard, stir and finally add your fried plantain

  6. 6

    Mix everything together cook for another 2 minutes, then turn off heat. Serve with your jollof rice
