Harissa cod with spiced cauliflower and salsa

A quick and easy recipe with the ingredients I had in my fridge. Smoky and spicy 🌶
Cooking Instructions

Preheat the oven to 180c
- 2
Chop the cauliflower and pepper. Season with paprika, cumin, salt pepper and oil and place in a roasting tray. Roast for 20mins
- 3
Meanwhile make the salsa: chop tomatoes and chilli. Grate in garlic and mix with salt pepper and lime juice
- 4
Rub the cod with harissa salt and pepper and roast in the center of the tin for an extra 10-15mins
- 5
Serve with the cod on the cauliflower and top with salsa 💃

This salsa is super quick and very cheap to make. I didn't want to drag out my blender, so I used my smoothie maker and it worked great. Quick Salsa
I suppose it would be easier to put the tomatoes, bell pepper, etc. to a food processor and pulse for a few seconds. But since I don't have one, I have to do it the old-fashioned way--slice and dice them manually! I call this quick salsa because I just slice and dice vegetables that I found in my fridge. If you only have tomatoes and onions, that would work, too.
