Squash Lasagna

This is a low carb Lasagna with no pasta. The general method can be used with any sauce or filling. For instance use ground turkey to reduce calories or a premade pasta sauce to save time.

Ingredients

  1. 1 cantomato paste
  2. 10roma tomatoes
  3. 1 bunchbasil
  4. 1large purple onion
  5. 1 clovegarlic
  6. 2 lbsground beef
  7. 1 lbground sausage
  8. 6-10zucchini and/or yellow squash
  9. 2 pintcontainers of ricotta cheese
  10. 1 blockmozzarella
  11. Olive oil
  12. Itallian seasoning or equivalent fresh herbs

Cooking Instructions

    Chop onions, tomatoes, basil, and garlic to desired size. I'm pretty rough with this and call it rustic.

    Cut squash in rounds with mandolin.

  3. 3

    Brown Meat in a little olive oil. I like to do this in a cast iron pan. Drain and set aside.

    Carmelize onions in olive oil and/or meat drippings. I'll usually just toss them in the same cast iron. Then add fresh basil, garlic, and tomatoes. A few minutes later add tomato paste and seasoning.

    Add in meat and mix together. Remove from heat.

    Create bottom layer of squash in a casserole pan.

    Add sauce to casserole pan.

  8. 8

    Add layer of ricotta cheese to casserole pan.

    Add top layer of squash in casserole pan.

  10. 10

    Slice rough rounds of mozzarella for top of casserole pan.

    Bake in oven for 30-45 mins on 350 until cheese is melted to your preference.

    Serve!
