Ingredients

  1. For plain Idli-
  2. 1/2 cupurad dal (soaked overnight)
  3. 1 cupplain rice (soaked overnight)
  4. as per tasteSalt
  5. as requiredGhee or oil to grease
  6. ForFor Sambhar-
  7. 1/2 bowlToor daal
  8. 1medium sized fresh bottle guard (cut in squares)
  9. 1-3 tspSambhar powder
  10. 8-10Curry patta
  11. 1 tspChana dal
  12. 1 tspUrad dal
  13. 1 tspMustard seeds
  14. 2-4green red chillies cut in halves
  15. 1 tspturmeric powder
  16. 1 tspcoriander powder
  17. 2 tspOil
  18. 1 tspJaggery or shakkar
  19. as requiredWater

Cooking Instructions

    Grind the rice and urad dal and mix together. Put into a large container and let it ferment. After it is fermented add salt and grease the idli stand. Pour a small quantity of batter in stand and steam for around 5-7 mins. Take out if a toothpick inserted in it stands clean.

    Heat the oil, add mustard add some seeds, curry patta, urad dal, chana dal, chillies etc. Add turmeric, coriander, jaggery and sauté for a couple of min.

    Boil soaked chana dal and lauki along with some salt and cook until done. Add this lauki, chana dal to the Tadka and cook for a few more minutes.

    Serve this when hot.
