Quick one pot red curry noodle soup

A nice and simple way to get that Thai fix. Skip the fish sauce (and use salt) for a vegan version

Ingredients

  1. 50 gdry noodles
  2. 25 clvegetable stock
  3. 15 clcoconut milk
  4. 1 tspsugar or coconut sugar
  5. 1 tspfish sauce
  6. 1 tbspred curry paste (or to taste)
  7. 1scallion or 1/2 small onion
  8. 100 gvegetables: leafy greens, zucchini, auberg, bean sprouts
  9. 25 gfried tofu or other protein
  10. Coriander

Cooking Instructions

  1. 1

    Chop and fry the scallion whites in some vegetable oil or coconut fat on high heat

  2. 2

    When starting to brown, add the vegetables (except leafy greens, bean sprouts etc) and stir fry for a minute

  3. 3

    Lower the heat, add the curry paste and stir fry for a minute or two until fragrant and dissolved in the oil

  4. 4

    Add the stock, coconut milk, sugar and fish sauce and bring to a boil

  5. 5

    Add the noodles, lower the heat and simmer until done

  6. 6

    Add the leafy greens and bean sprouts and cook until lightly wilted

  7. 7

    Serve with some fresh coriander
