Banana Fritters with Sweet & Spicy Soy Sauce Dip

These days, banana fritters are served with wide variety of toppings or extras like #syrup, #honey, #icecream, #chocolate, powdered sugar, #caramel sauce, creamy #custard and even grated #cheese. We, however, still love our banana #fritters served with very much #Asian flavour, The #Sweet & #Spicy Soy Sauce #Dip.

Note:
1. For the Fritters - Avoid using overripe bananas. We use Cavendish bananas; the only bananas that are widely available and sold here.
2. For the sauce - Adjust chillies accordingly.
3. Flour - use equal portion of 4 flours listed in the recipe to make the batter, depending on how many bananas on hand.
4. To make the batter, some use cold water or lemonade (clear carbonated drinks). We use tap water.

Ingredients

  1. A. 6 Bananas - sliced
  2. B. The Batter (See Notes)
  3. 1/4 CCorn Flour
  4. 1/4 CRice Flour
  5. 1/4 CPlain Flour
  6. 1/4 CSelf Raising Flour
  7. 1 tbspsugar
  8. Pinchsalt
  9. Pinchturmeric powder
  10. Enough water to make a thick batter
  11. C. Soy Dipping Sauce
  12. 10bird eyed chillies
  13. 4garlic
  14. 1/3 CSweet Soy Sauce
  15. 1 tbspdark Soy Sauce
  16. 1 tspgranulated sugar
  17. 1 tbsplemon juice
  18. Pinchsalt
  19. Notes:
  20. 1. You can also use only 3 flour:
  21. 1/2 CSelf-raising flour
  22. 1/2 Ccorn flour
  23. 1/3 Crice flour
  24. 2. Reduce or add chillies to your liking
  25. 3. We use ABC Sweet Soy Sauce (see pic)
  26. 4. We add dark soy sauce to make the sauce less thick

Cooking Instructions

    See pic below for Sweet and Dark Soy Sauce we usually use.

    A. Bananas - Peel and cut bananas diagonally with 1.5 inch thickness.

    B. The Batter- In a mixing bowl, combine all dry ingredients in B. Add water in small batches until you have a smooth batter with consistency that is similar to that white school glue.

    Frying the fritters - Heat enough oil in a pan for deep frying. Drop few slices of banana into the batter. Use fork to lift these slices straight to hot oil. Avoid overcrowding the pan. Deep fry until both sides turn golden brown then transfer to paper towel to absorb any excess oil. Serve warm.

    C. Soy Dipping Sauce - Heat 1 tbsp of oil in a pan. Sauté chillies and garlics until both chillies and garlics are slightly soft. Remove from the heat. Crush/grind using mortar and pestle into paste. Combine and mix this chili-garlic mixture with the rest of the ingredients in C. Adjust taste accordingly. It should taste sweet and spicy. Serve with banana fritters.
