Ebimayo - Batter-fried Shrimp with Ra-yu Mayo Sauce

I love shrimp with mayonnaise sauce so I have tried many different variations. I finally settled on this.

Don't add the chunky parts of the edible ra-yu, just add the oil. If you don't have edible ra-yu, just use the regular type. (In that case, decrease slightly).
You could also simply pan-fry the shrimp, but deep-frying produces a more tender and delicious dish. Recipe by Yuuyuu0221

Ingredients

2 servings
  1. 15Shrimp
  2. 1 tspSake
  3. 1Salt and pepper
  4. 1/2★Egg
  5. 5 tbsp★Katakuriko
  6. 1Oil
  7. ■Sauce:
  8. 4 tbsp☆Mayonnaise
  9. 1 tsp☆Chunky ra-yu
  10. 1 1/2 tbsp☆Milk
  11. 1 pinch☆Salt
  12. 1Broccoli

Cooking Instructions

    Shell the shrimp and remove the vein from the backs. Rub them with katakuriko and salt, rinse, and dry well. Boil the broccoli in salted water.

    Season the shrimp with salt, pepper, and sake. Add the ★ ingredients and mix everything together well. Put the ☆ ingredients into a bowl and combine well to make the sauce.

    Deep-fry in 170℃ oil until crisp.

    Place the shrimp in the sauce bowl from Step 2. Serve on a dish and decorate with broccoli. Top with chunky ra-yu.

    It's also okay to shred some lettuce to place underneath the shrimp. You could also add 1/2 tsp of lemon juice and ketchup for a different taste.

    It also tastes delicious with minced Japanese leek sprinkled on top.
