Vietnamese-Style Chicken Salad with Heaps of Vegetables Vietnamese-Style Chicken Salad with Heaps of Vegetables
This dish is so easy and delicious that it appears regularly on our dinner table. When I was cooking one day, the amount of vegetables kept increasing and it turned into this recipe. Besides the steamed chicken and peanuts, the rest of the ingredients are based on what I have on hand. This time I had a lot of carrots . I eat a whole bowlful every time I make this.Coriander paste is a green paste made up of coriander mixed with garlic, ginger, etc. It is great for bringing out deep flavors.Recommendation: You can also use Wakegi scallions, lettuce, bell peppers, celery...even just cabbage and carrots is fine. It's all approximate but delicious! For 2500ml bowl. Recipe by zuci cookpad.japan -

Mustard Cheese Salad with Spring Cabbage & Chicken, Mustard Cheese Salad with Spring Cabbage & Chicken,
I made a filling salad with soft and delicious spring cabbage. You can use chicken breast or thigh meat instead of tenders.I like to use pan-fried tenders for this salad, but you can microwave the chicken to make it healthier![If you use the microwave] Season the chicken tenders with salt and pepper, sprinkle with 2 teaspoons of sake or wine. Microwave for 1.5 minutes at 600 W, flip over and microwave for 30~40 seconds. Add garlic powder to the ingredients and mix. Recipe by putimiko cookpad.japan -
Light Russian salad with prawns Light Russian salad with prawns
Russian salad is huge in Spain, served as tapas or starter all year round, but particulary popular in home cooking during the hot Summer months. This is a light take on the usual recipe, using prawns instead of tinned tuna and mixing natural yoghurt with the sauce to cut down on mayonnaise and give it a slight tang. Makes a great starter for al fresco dining, also good picnic food too. If you do make it for a picnic, I'd recommend mixing mayo and yoghurt in with the other ingredients just before eating. Play with the quantities depending on how many will be eating. This was enough for 4. Becky -
