Ingredients

  1. Fresh Tomatoes
  2. Onions
  3. Scotch bonnet
  4. Red bell pepper
  5. Ginger/garlic
  6. Red chilli
  7. Palm oil
  8. Iru(locust beans)
  9. cubeSeasoning
  10. Thyme
  11. leafBay
  12. Salt
  13. Cooked beef/pkomo(or any protein of choice)
  14. Tomatoes paste

Cooking Instructions

    In a blender add in some tomatoes,red bell peppers, onion,red chilli, Ginger,garlic, scotch bonnet blend smoothly and set aside.

    Add enough Palm oil in a pot,add some diced onions, bay leaf,iru and fry for 1-2min, after 2min add in your tomatoes paste fry for 5-7 min until the sour taste is eliminated,than add in your blended tomatoes stir and cover it to cook.leave to cook until the water is dried up. fry properly for 10-12min stirring it occasionally.Add in your salt, seasoning cube, thyme, stock, protein of choice, pkomo and some water to loosing it up cover and leave to cook for 5more minutes and your stew is ready.

    For the okra.wash and grate ur okra and set aside.bring water to a boil add in your okra,salt, seasoning,iru and some diced onions cover and leave it to cook for 4-6min and it's ready.you can serve this with any swallow of your choice. ENJOY
