As it was bonito season, I came up with a tasty way to consume them seared.

Be careful not to overcook the bonito. If you're using a light ponzu sauce, you may want to add a bit of soy sauce for more flavor. Recipe by humming_m

Ingredients

4 servings
  1. 2slabs Raw bonito
  2. 4to 5 Scallions
  3. 1/2Young onions (or normal onions)
  4. 1 tspVegetable oil
  5. For the sauce:
  6. 100 mlPonzu
  7. 1/2 tspGrated ginger
  8. 1/2 tspGrated garlic

Cooking Instructions

    Finely slice the scallions. Finely slice the new onions and soak in water for 10 minutes, then strain.

    Prepare a bowl of ice water. Heat vegetable oil in a pan.

  3. 3

    Sear both sides of the raw bonito for 10 seconds each, then immediately transfer to an ice water bath to chill. Pat dry with paper towels.

    Use half the amount of onions and plate. Cut the seared bonito to your desired thickness, and top with the rest of the onions. Garnish with scallions.

    Mix the grated ginger and garlic with the ponzu sauce, drizzle over the dish, and serve.
