Ingredients

  1. 4eggs
  2. 1/2 cupvegetable oil
  3. 1/2 cupmelted butter
  4. 1 cupmilk
  5. 1/2 cupdessicated coconut
  6. 1and 1/2 cup semovita
  7. 1/2 cupflour
  8. 1 cupsugar
  9. 1 tbspbaking powder
  10. Pinchsalt
  11. 1 tspvanilla essence
  12. For syrup:
  13. 1 cupwater
  14. 1 cupsugar
  15. 1/2lemon juice

Cooking Instructions

    Break your egg in a bowl, add sugar and vanilla essence. Beat until pale and creamy.

    Add vegetable oil and melted butter,beat for 5mins. Then add the milk, baking powder and mix well.

    Add in the semolina flour, flour, dessicated coconut, pinch of salt and mix until fully incorporated.

    Spread the mixture into a prepared pan. Bake in a preheated oven at 180'C for 45mins or until a toothpick inserted into the centre comes out clean.

    Let's make the syrup for the cake; put your pot/pan on medium flame. Add in sugar, water and lemon juice and stir.

    Keep stirring for 5mins or until sugar has dissolved. Bring it to a boil.

    Boil, without stirring, for 4 to 5mins or until mixture thickens a bit. Pour syrup over cake and rest for 10mins. Sprinkle some dessicated coconut on top to design.

    Cut into desired shapes and serve!
