Low-cal Burdock Root Salad

I heard that it's a good idea to substitute half the mayonnaise in a salad with yogurt, so I did that in this recipe.
We use a reduced calorie mayonnaise to start with, but this salad cuts down the calories even more. Recipe by Gacchan
Cooking Instructions

Finely julienne the burdock root and carrot, and boil briefly. Drain and sprinkle with the pre-seasoning soy sauce while still hot.

Mix with the combined ◎ ingredients and the salad is done!

Apparently, you lose half of the nutrients if you peel a burdock root or soak it in water.Cook the burdock root soon after cutting it. I recommend seasoning this pretty strongly when stir-frying. Simple Lotus Root Salad
I just came up with this off the top of my head. I also recommend you enjoy it with French dressing.In Step 3, fry the lotus root until browned.If you are not using sushi vinegar, make your own by combining 1 tablespoon of vinegar with sugar and salt.If you just use vinegar, it won't have a mellow taste, so make sure you add a little sugar as well. Delicious Taro Root Salad
I figured taro root could be used as a potato substitute for salad, croquette, gratin, etc, not just potato tumblers. I tried this recipe with umeboshi and it was delicious.If you steam the taro, it'll be easy to remove the skin by hand. In step 3 don't mix in all of the taro. Set a little aside, then mix in a little later, but not too much, thus you'll be able to savor two textures of taro root. Scatter with julienned nori seaweed and shiso leaves for aroma! Creamy Radish Salad
If you don't like the sharpness/spiciness of radishes all that much, then this recipe is great. By making the dressing with creme fraiche or sour cream, you get a mild, creamy yet refreshing salad :) This is a German recipe my mom and dad told me about so we remade with our garden radishes. Adjust the amount of vinegar, sugar and cream to taste.Try mixing in other herbs besides dill or a some sliced apple. Some German recipes will add 1-2 Tbsp of horseradish too but I'm not a fan.

Daikon Radish Sprout Salad
Daikon radish sprouts are inexpensive and available everywhere, and are really handy to use as toppings or garnish when a little color is needed. I always seem to have some left over, so I was wondering if there was a recipe that would allow me to use them in something that could be marinated in advance. The marinade sauce is adapted from a recipe that I wrote down from a booklet I saw more than 10 years ago. It was a sweet sauce so I thought it would go well with the spiciness of the sprouts. I tweaked the recipe in many ways to work well with the ingredients.I'm not sure how long this lasts since we always finish it the next day. Please try to finish it as soon as possible. You can of course make it in a plastic container from the start. I just prefer to make it in a bowl and then transfer it to a plastic container because I think the flavors meld better that way, especially if this is to be eaten the same day it's made.If you use cucumbers instead of sprouts as suggested in step 9, be aware that cucumber changes color faster than sprouts, so you may want to eat the salad the same day it's made.
