Kabocha Squash Salad

This is a re-creation of the type of kabocha salad they sell in department store food halls.
I use a sweetened yogurt. If using plain yogurt, adjust the sweetness with sugar.

Cooking Instructions

I use 1/4 of a kabocha squash.

Remove the seeds and the rind from the kabocha squash, cut up and microwave until tender.

Put the soft cooked kabocha squash in a bowl.

Add the yogurt, mayonnaise and raisins.

Mix together and done.

I used 1 container of this yogurt. It's a lot, but no problem! That's why the salad is so creamy.
