Easy Egusi Soup

This soup was soo easy and quick; I use smoked chicken as my protein 😋😋 very perfect with hot yellow eba.

Ingredients

  1. 1 1/2 cupEgusi blended
  2. 1onion (blended)
  3. 1/4 cuppalm oil
  4. 1 cupblended mix of Tatashe, Shombo and pepper
  5. Smoked chicken (cut into large chunks)
  6. 2 tbspcrayfish
  7. 1knorr cube
  8. to taste Salt
  9. Water or chicken stock (optional)
  10. leafUziza 1/4 cup dice
  11. leafUgu 1/2 cup dice

Cooking Instructions

    In a bowl, pour blended onion and mix your blended Egusi with the onion purée;

  2. 2

    Heat up palm oil and once it’s hot, pour in blended pepper mix and stir fry for 5 to 7 minutes

  3. 3

    Add smoked chicken and crayfish, stir for another 3 to 5 minutes, add knorr cube and little salt, stir and taste and ashy your spices if necessary

  4. 4

    Using a spoon, scope in Egusi/onion mix as lumps into your pepper mix and cover pot for another 5 mins,

  5. 5

    Stir to make sure it doesn’t get burnt, add in 1/2 cup of meat stock or water; make sure to add in little water or stock at a time.

    Add Uziza leaf and ugu leave; and turn off heat. Stir Serve with hot yellow eba
