Spring Rolls Made with Everyday Ingredients

These delicious spring rolls don't contain too many ingredients, but they are nice and crunchy. When it's just me and my two daughters home for dinner, I don't cook any rice and I just make lots of these raw spring rolls. Since I always have a lot of different sauces on hand, we never get tired of the flavor. Plus we can take in lots of nutritious vegetables, so it's completely satisfying.
Lettuce is more crispy and will tear through the spring roll skins. It's best to use a leafy lettuce such as red-leaf lettuce, bouquet lettuce, or pleated lettuce, but if you only have regular lettuce, blanch it quickly or slice into somewhat wide strips. This will give a nice crunchy texture when wrapped and eaten. Recipe by Heartful Kitchen Rei

Cooking Instructions
- 1
Using red-leaf or bouquet lettuce or any kind of leafy greens will be easier to roll up the fillings in the center. Baby leaf lettuce also tastes great.
- 2
Julienne the cucumber and carrot. Reconstitute the wakame according to the package instructions and wring out the excess moisture.
- 3
Once all of the filling ingredients are ready, roll them up. The spring roll skins only need to be slightly wet. They softened as the vegetables release moisture.
- 4
Lay out the ham and then place the other vegetables on top. Since the ingredients will slide around, use your finger to hold them down as you roll them up in the skins.
- 5
Slice the rolled up raw spring rolls into bite-sized pieces. If you will be eating with your hands, cut them in half. If you want to eat them in one bite, cut them into quarters.

Fresh Spring Rolls Fresh Spring Rolls
I love fresh spring rolls, so I make them with ingredients that we always have at my house. Using boiled eggs or shrimp turns them into colourful and gorgeous fresh spring rolls. This time I used canned young (mini) corn, but crab-flavoured kamaboko and okra taste delicious and also look beautiful when the spring rolls are sliced in half. It's quicker to rehydrate the rice paper wrappers in hot water, but if they get too soft, they are hard to handle. So I think it's better to rehydrate them in cold water until you get the hang of it to avoid mistakes. If the rice paper wrappers are still too stiff to roll, wait a little until the moisture from the ingredients soften them. They will soon be soft enough to use. For 10 rolls. Fresh Spring Rolls (Super Easy Lazy Kitchen Version) Fresh Spring Rolls (Super Easy Lazy Kitchen Version)
Our family's fresh spring rolls live up to the name 'Lazy Kitchen.' We make food that's as quick and easy as possible—perfect for anyone short on time who wants a simple meal. Here's how we do it: Buy grilled chicken skewers (just the chicken meat), and get spring roll wrappers. For the filling, we use mint leaves, carrots, and green apple. For the dipping sauce, we use bottled plum sauce, which you can find at most grocery stores.Cut the spring roll wrappers in half. Find a large plate that fits the wrappers and fill it with clean water to soak them. Prepare the fillings: pick the mint leaves, shred the carrot, and shred the green apple. Slice the grilled chicken into long strips. Soak the spring roll wrappers in water until they're soft, then place them on a cutting board. Add the veggies, then the chicken, and gently roll them up. ครัวขี้เกียจTranslated from Cookpad Thailand -
