When there’s a little bit of dry black beans, a few baby Limas, and a tad bit of pintos left and there’s not enough of one to cook for a meal. Ya mix’em all together! Throw in some ham, a lil bit’o onion and garlic…. Yum! Tasty!

Ingredients

  1. 2 cupMixture of dry beans
  2. 1/4 cupchopped onion
  3. 1-2 clovesgarlic
  4. At least 1 cup Bits of ham or more
  5. Salt & pepper to taste

Cooking Instructions

    Throw all ingredients into 3 qt Instant Pot. Cover with water. Up to 2 inches above beans.

    Cook on manual setting for 30 minutes. Let it natural release. Check for “crunchy” beans. If there’s some crunchy ones, cook another 15 minutes on manual with natural release.

    Bake some Southern Cornbread. Serve with a side slice of ham.

    Refrigerate leftovers.

    Note: if you like thicker bean juice transfer to cook pot and bring to a rolling boil, reduce heat and let simmer until juice thickens.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
