Ingredients

  1. 1 bagred beans or 2 small
  2. 1 (32 oz)chicken broth
  3. 1/2 packpork fat
  4. 1 packsmoked sausage sliced up
  5. 1 tbspbacon grease or butter for sautéing
  6. 1bell pepper, finely diced
  7. 1small onion, finely diced
  8. 3 clovesgarlic, minced
  9. Salt, to taste
  10. Tony’s, to taste
  11. Slap ya mama, to taste

Cooking Instructions

    Rinse and check your beans for ugly beans,rocks or dirt chunks. Set aside.

    Add your bacon grease or butter to a pan and sauté your onions and peppers. Once translucent and very tender add them to your crockpot.

    Add your sausage to the pan you used for veggies and sauté until they’re browned add in your garlic and cook until fragrant. Add about 1/3 c of your broth to deglaze the pan. Add your mixture to the veggies in the crockpot

    Next add your beans to the crockpot and your broth. Add your seasonings stir and test the flavor of your water. Add more if you need to. There’s no specific way it should taste as long as you like the flavors.

    Cut your pork fat in half and add to the beans in the crockpot. Give it all a quick stir and set your crockpot to low for 8-10 hours. I do mine the night before. In a few hours you can taste test and if they’ve soaked a lot of liquid add some water. Enjoy with white rice.
