Corned Beef and Cabbage

Slow boiled corned beef with green cabbage and red potatoes

Ingredients

1-3 hours
2-3people
  1. 12-3 lb raw corned beef
  2. 1 tbspickling spice (some corned beef come with it
  3. 2 bottlesgood ginger beer 2 bottles of a good lager or similar beer
  4. 1 dozensmall red potatoes, cut in half if not tiny
  5. I medium head of cabbage sliced into 2-3 inch wedges
  6. Butter, salt pepper and whole grain mustard for serving

Cooking Instructions

    Rinse corned beef and add it and the spices to a large pot

    Pour a bottle of beer and a bottle of ginger beer over beef, Add water to cover as it cooks if needed.

    Simmer on low, covered for 45-55 minutes per pound or until it is tender and easily poked with a fork

  3. 3

    Remove corned beef and let sit, boil potatoes in corned beef liquid until tender, you may need to add more water, after about 20 minutes add in the cabbage

    Thinly slice the corned beef, top cabbage with butter and sea salt, serve with mustard
