Ingredients

4 servings
  1. 1 cupor more Baby carrots or carrots cut into 4
  2. 1bulb Cauliflower
  3. 1large green bell pepper
  4. 1 clovegarlic and ginger peel and grind
  5. 2Spring onions sliced
  6. 2Whole mushrooms cut into
  7. 3Chopped scotch bonnet
  8. 3Maggi chicken seasoning
  9. 1 cupChicken breast slices
  10. 2 tablespoonsCorn flour
  11. 2 cupswater or broth
  12. 1 tablespoonDill seeds
  13. HandfulChopped parsley

Cooking Instructions

  1. 1

    In a sauce pan or deep pan add in carrots and stir, do not add oil yet.
    Keep tossing until about to grill then add in slice onion 1/2 the quantity and keep the rest.

    Add oil and and stir then add cauliflower. Before adding the chicken breast mix it with ginger and garlic and 1 Maggi chicken cube. Mix together and add to pan and keep stirring. Remember to keep the heat low

    Now add scotch bonnet, mushrooms and then chopped parsley. Stir again to combine them all

  4. 4

    Add green pepper and remaining spring onions. Then add water or broth and allow to simmer for 1 min. Now make a slurry with corn flour and add to surf and turf to add consistency and body to the sauce. Simmer again for seconds and serve to enjoy 😉.
