Fresh baked zucchini bread

Cooking Instructions

Mix dry ingredients: flour, cocoa powder, baking soda and salt. Set aside.

Mix eggs, melted butter, oil, vanilla and brown sugar.

Stir dry ingredients into wet ingredients and mix together. Add zucchini and 3/4 cups of the chocolate chips.

Pour batter into non stick sprayed loaf pan and top with the remaining 1/4 of the chocolate chips.
Bake at 350 degrees for 50-60 minutes or until cooked through.
Serve warm.

My brother’s neighbor brought over some zucchini bread a few years back. He pulled it out of the fridge and asked if I wanted some. I very reluctantly agreed to try it. I know, I also thought, “What kind of sick woman would put zucchini in bread”!? However, I was instantly proven wrong with just the first bite and I was amazed. I wondered how it survived for so long... I was thinking I would have eaten the whole loaf. It was addictive. Maybe it wasn’t only zucchini in there. Hahaha!
