Ingredients

2 loaves
  • 2 cupssugar
  • 3eggs
  • 2 tspvanilla
  • 1 cupvegetable oil
  • 2 cupsshredded and drained zucchini
  • 1 cupcrushed pineapple
  • 3/4 tspnutmeg
  • 1 1/2 tspcinnamon
  • 1 1/2 tspbaking powder
  • 2 tspbaking soda
  • 3 cupsflour
  • 1 tspsalt
  • 1 cupchopped pecans
  • 1 cupraisens

Steps

  1. 1

    Beat together in a large mixing bowl, sugar, eggs, vegetable oil and vanilla.

  2. 2

    Add zucchini and crushed pineapple and beat.

  3. 3

    Add nutmeg, cinnamon, baking powder, baking soda, flour and salt and beat.

  4. 4

    Mix in chopped pecans and raisins.

  5. 5

    Grease 2 loaf pans. Bake loaves at 350 degrees for 45 minutes.

  6. 6

    Remove after 5 minutes from loaf pan and let cool on a baking rack.
