Beef Sweet and Sour Stew

This is an adaptation of a recipe from The Explorers Journal, which is a hiker/explorer quarterly I picked up at a Fjallraven store, where my husband bought a raincoat. The original recipe called for "rock tripe" as the protein, which is a mushroom that can be gathered while hiking, as a survival soup. How hikers would source the chicken stock, brown sugar, vinegar etc. I don't know.

Ingredients

45 Minutes
2 servings
  1. 1# Beef Stew Meat
  2. 1/4 Cupdried onion
  3. 1 TspMinced Garlic
  4. 1/2 CupChicken Stock
  5. 1/2 CupTamari Sauce
  6. 1/2 CupApple Cider Vinegar
  7. 1/2 CupBrown Sugar
  8. 1Pachage of Frozen Stew Vegetables

Cooking Instructions

45 Minutes
  1. 1

    Brown the stew meat in the pan, pepper the meat to taste, and cook for 2.5 minutes a side.

  2. 2

    Combine the rest of the ingredients in the stock pan, bring to a light boil, then simmer for 30 Minutes.
