I wanted to create an easy dish that went well as an appetizer with wine.

Taste and adjust the amount of salt you add. You can use just one kind of bean if you like. I added some honey to the dressing, which imparts a very mild flavor to the ingredients. Sugar can be used instead. For 2 servings. Recipe by Renbasu

Ingredients

2 servings
  1. 1Avocado
  2. 100 gramsMixed beans (canned)
  3. 4to 5 Cherry tomatoes
  4. 2anchovies ● Anchovies, finely chopped
  5. 1 clove● Grated garlic
  6. 2 tsp● Grainy mustard
  7. 1 tspLemon juice
  8. 1 dash● Salt
  9. 1 dashPepper
  10. 1 tspOlive oil
  11. 1bit less than 1/2 teaspoon ● Honey

Cooking Instructions

    Peel and de-pit the avocado, and cut into 1 cm cubes. Cut the tomatoes up into 1 cm cubes too. Drain the canned mixed beans.

    Mix the ingredients marked ● and add the avocado, tomato and beans.

    This is delicious on top of slices of toasted baguette or English muffins, too. It's great to have with wine!
