Fresh Spring Rolls with a Delicious Sauce

I love fresh spring rolls but I'm not too fond of sweet chili sauce...so I combined my favorite seasoning ingredients to make this delicious dipping sauce.

Even people who don't like vegetables will eat them served like this, so it's a great way to try out all different sorts of vegetables.
When rehydrating the wrappers, it's best if you take them out while they are still a bit firm, since the moisture in the wrapped vegetables will soften them some more and make them just right. If they are still too hard try spraying them with water using a mister or spray. You can also try lightly brushing some water on them. Recipe by Taberunba

Ingredients

  1. 1as much (to taste) Fresh spring roll wrappers
  2. For the sauce:
  3. 1 tbspMayonnaise or yogurt
  4. 1/2to 1 tablespoon Gochujang
  5. 1/2 tbspFish sauce or soy sauce
  6. 1/2 tbspLemon juice
  7. 1 tspKetchup
  8. 1/2 tspCondensed milk or honey
  9. Things to wrap of your choice:
  10. 1. This time I used: loose leaf lettuce, mizuna greens, avocado, cured ham, crabmeat and cream cheese

Cooking Instructions

    Prepare the filling ingredients to wrap!

    Combine the sauce ingredients, and adjust the seasoning to your taste.

    Warm up some water in a frying pan until lukewarm, and immerse the spring roll wrappers one at a time for about 30 seconds. Remove them from the water and place on a cutting board and tuck in your favorite fillings.

    Wrap the rolls tightly, eliminating any air pockets. Cut into easy-to-eat pieces and serve.
