Ingredients

  1. 6 cupsfresh Spinach
  2. 1 poundsliced mushrooms
  3. 3zucchini, peeled and cut into chunks
  4. 1 cupchopped red onion
  5. 12eggs
  6. 1/8 teaspoonsalt
  7. 1/8 teaspoonblack pepper
  8. 1/8 teaspooncrushed red pepper
  9. 1/3 cupheavy cream
  10. 2 cupsshredded pepper Jack cheese
  11. Olive oil cooking spray

Cooking Instructions

    In a large baking pan sprayed with olive oil cooking spray layer your spinach, mushrooms, zucchini and chopped red onion at the bottom of pan ……..

    In a large bowl whisk your eggs, salt, black pepper, crushed red pepper and heavy cream until thoroughly mixed, then pour egg mixture all over veggies in baking pan ……….

    Sprinkle your pepper Jack cheese all over eggs ……

    Bake, uncovered, in a preheated 350 degree oven for 1 hour, or until quiche is set in the center (stick a toothpick in the center to test for doneness, if it comes out clean it’s good to eat ! 🤩) I baked mine @ 350 but you can easily do 375 degrees, I also increased the heat for the last 10~15 minutes of baking time to get that golden brown color on top of my quiche !!!!

    Let quiche stand for about 10-15 minutes before cutting, then cut into squares, serve and enjoy 😉!
