Potato and Onion Egg Nests

My children love this dish.

My children love this dish.

Cooking Instructions

Peel and finely julienne the potatoes. Wash in cold water and drain in a colander or sieve.

Slice the onion. Heat 1 tablespoon of olive oil in a frying pan, sprinkle the onion with Krazy Salt, and stir fry over medium heat.

When the onion has softened, add 2 more tablespoons of olive oil and the potatoes, add more Krazy Salt and stir fry.

When the potatoes have softened too, spread it all out evenly, make 4 wells and break the eggs into the wells. Cover with a lid and cook over low heat.

When the egg yolks are soft set, transfer to serving plates. Sprinkle with grated cheese, add some ketchup and they are done.

Break up the yolk while eating. Delicious.

My family's Oyako-don always had potatoes in it. I remembered how delicious the fluffy potatoes were when seasoned with the sweet tasting sauce and wanted to make something simple without chicken included.When simmering the potatoes and onions, keep as much of the soup as possible so you can spoon it onto the rice later on.
