Chocolate Financiers

I bought new financier molds, so I made normal financiers and a chocolate version.
A sprinkle of cacao nibs makes them extra delicious. I added 10 g this time. For 8 pieces. Recipe by nyonta

Cooking Instructions
- 1
Prepare beurre noisette (slightly browned butter). Put the butter in a pot on medium heat. When bubbles form and the popping sounds stop, turn the heat off.
- 2
Strain. Try not to put the burnt bits of butter into the bowl.
- 3
Cream the egg whites and sugar in a bowl. Stir well as if to dissolve the ingredients together, but try to foam up the mixture.
- 4
Sift the flour, cocoa powder and almond flour together and add to the bowl.
- 5
Add the browned butter and mix in. The batter is done.
- 6
Fill the financiers cups 80% full. Sprinkle in cocoa nibs as you like.
- 7
Bake for 15-18 minutes at 180°C.
- 8
They're done!
- 9
I bought cacao nibs at a baking speciality store for 178 yen / 100 g. Cacao beans are aromatic and crunchy like nuts, so I recommend them.

I made this for my friends to give out on Valentine's Day. I added coffee to my favorite chocolate financier and made this recipe. It tastes better the next day or after 3 to 5 days. It's just mixing, so there are no special tricks. You could use unsalted or salted butter. Browned butter will add more flavor, but you could also microwave and melt the butter. Marron Glacé and Hazelnut Financiers Marron Glacé and Hazelnut Financiers
I found some broken marron glacé on sale, so I decided to make financiers with them. I tried combining hazelnut powder and maple syrup in the batter, which was a perfect combination. These financiers have a very fall flavor. The butter should be browned well to go with the hazelnut powder.Pass the butter through a fine-meshed tea strainer. In addition, slowly pour the butter into the bowl with the other batter ingredients, so that the small burned bits in the bottom of the container don't get transferred. The financiers are delicious when freshly baked, or the next day, or the day after that. Made in a Bread Machine! Rice Flour Financiers Made in a Bread Machine! Rice Flour Financiers
To make up for reducing the sugar and butter compared to regular financiers, I used rice flour to make this moist. It tastes so rich!- If you don't strain the browned butter, it'll taste bitter and grainy, so make sure to filter it through some kitchen towels.- Don't reduce the egg white, sugar or butter any further or you'll lose the flavour and texture.- This time, I used 3 egg whites, 80 g sugar and 80 g butter for a perfect loaf 25 minutes before the scheduled finish time. The Best Financiers The Best Financiers
I had some egg whites left over from making Crispy and tender almond cookiesso I bought a financier mold in order to use them up. I created this recipe after taste-testing my favorite store bought financiers several times.3 medium sized eggs yield 100 g of egg whites. You can measure out the egg whites first, and adjust the amounts of the other ingredients accordingly. I reduced the sugar as much as possible in order to enjoy the almond and butter flavors. If you prefer it to be sweeter, increase the powdered sugar to 60 g. I also recommend adding 2 g of baking powder to make a puffier version. Recipe by *3103* cookpad.japan -

I decided to make madeleines with a chocolate bar. If the recipe amount of the walnuts and chocolate are both 50 g, I wanted to make the recipe amount of everything except the baking powder, milk, and rum 50 g as well, but I ended with this recipe since it is too sweet with 50 g of granulated sugar and chocolate bar. It might be ok to have 50 g of granulated sugar, depending on your preference. Please handle with care when you take the madeleines out of the mold, since they are very moist. I used 6 shell molds, and 5 muffin molds (filled about 1 cm high). Recipe by caramel-cookie cookpad.japan -
