I originally wanted to make this using chestnuts, but I couldn't get my hands on the time-saving peeled frozen chestnuts either because it was too soon seasonally or the store didn't have them...They are expensive even if they were in stock...Also they happened to have thick and nicely-shaped sweet potatoes for a cheap price at the nearby shop I also had just the perfect amount of pancake mix leftover, so I tried making these.I really have none, but sweet potatoes and chestnuts. I think they both have their differing sweetness and water content. I think dispersing the finished product individually is also fun. Here's another recipe born out of my laziness. My 3rd recipe in my "Easy with Pancake Mix" series. I'm too lazy to even measure out the ingredients, so you only need a measuring cup and spoon to make these muffins. When you're a little hungry, you can make these muffins in 30 minutes and eat them freshly out of the oven.You could also use kabocha squash or sweet potato paste instead of bananas. In that case, make sure to measure out 100g net weight. These muffins contain camembert cheese, which goes well with bananas. I created a recipe that could be made easily using pancake mix. I substituted yogurt for half the margarine to enhance the flavor of the cheese and to make the muffins lighter. This is another variation of my pancake muffins. This one with fresh blueberries added for a bite size blueberry pancake. They freeze great. Cool and freeze to reheat briefly in the microwave for a quick delicious breakfast or snack.

Our son is a pancake freak, we were out of pancake mix but had some muffin mix... tried out different ways and found out one egg does the job and tastes way better than regular pancakes! We like adding bananas yumm!
