Tomato-Poached Broth & Fish

Ingredients

2 servings
  1. 2 pcsHake/Cod fillet (boneless)
  2. 3garlic cloves (minced)
  3. 4shallots (cut into rings)
  4. Sprinkle of chilli flakes
  5. 10small tomatoes, halved
  6. 1 tspfish sauce
  7. 1 handfulcoriander
  8. 1lime (cut into 2 pieces)
  9. olive oil
  10. salt and pepper
  11. mint leaves (optional)

Cooking Instructions

    In a hot pan, add 4 tbsp oil. When hot enough, add shallots and cooked until slightly brown. Add garlic after. Once browny, remove them from the pan.

    Add tomatoes into the pan and cook for about 2 mins.

    Add 1 and 1/4 cup of water into the pan. Bring to slight boil. Add fish, chili flakes, fish sauce into the pan.

    Cook for about 10 mins or until fish is cooked. Salt to taste.

    Add coriander, shallots & garlic back to the pan.

  6. 6

    Serve with rice/mashed potatoes and salad.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
