Easy 5-Minute Maitake and Cucumber Side Dish

I had a small amount of both cucumber maitake to use up.

There's nothing much to it, but add salt to taste. Substituting ponzu for the soy sauce is also delicious. For 2 servings. Recipe by Marley

Ingredients

2 servings
  1. 1/2Cucumber
  2. 1/4 bunchMaitake mushrooms
  3. 1 tspSesame oil
  4. 2 tspSoy sauce

Cooking Instructions

    Lightly sauté the maitake in sesame oil, then set aside to cool for a bit. Thinly slice the cucumber into rounds, then lightly sprinkle with salt.

    Combine the cucumbers with soy sauce and the maitake, and it's done! (If you have extra time, chill it in the refrigerator before serving.)
