Ingredients

8 servings
  1. 2large onions, sliced
  2. 1-3/4 lblean corned beef brisket, trimmed
  3. 4carrots, cut into 2" pieces
  4. 4all-purpose potatoes, peeled and cut into 2" pieces
  5. 2fresh thyme sprigs
  6. 1-1/2 lbhead green cabbage, cored and cut into wedges
  7. 1-1/4 creduced-sodium chicken broth
  8. 1 tspdry mustard

Cooking Instructions

  1. 1

    In 5- or 6-quart crock pot, layer onions, beef, carrots, potatoes, thyme and cabbage. Pour broth over cabbage then sprinkle mustard on top.

    Cover and cook until meat and veggies are fork tender, 4-5 hours on high or 8-10 hours on low.

  3. 3

    Transfer beef to platter and cut into 16 slices. Place veggies around meat.
