Chocolate Cupcakes w/ Vanilla Buttercream Frosting

Ingredients

  1. 3/4 cupunsweetened cocoa powder
  2. 3/4 cupflour
  3. 1/2 tspbaking powder
  4. 1/4 tspsalt
  5. 3/4 cupbutter/margarine
  6. 1 cupsugar
  7. 2eggs
  8. 1 tspvanilla extract
  9. 1/2 cupsour cream
  10. frosting:
  11. 2 cupspowdered sugar
  12. 1/2 cupmargarine
  13. 1 1/2 tspvanilla extract

Cooking Instructions

    Sift and set aside the flour, cocoa powder, baking powder and salt.

    Mix the butter and sugar until light and fluffy. Add and beat in eggs, one at a time, then the vanilla. Gradually add and mix the flour mixture, alternating with sour cream, and ending with flour.

    Fill up 3/4 of each baking cup with the batter. Bake for approx. 20 minutes at 350°F.

    FROSTING: mix butter until smooth, beat in powdered sugar, then vanilla.

    Pipe the buttercream frosting onto the cupcakes. Add strawberries and coconut on top for decoration and extra flavor 🙃(optional).
