Growing up we would eat beans at least once a day. So i grew up loving beans. Here is how i love eating mine.
Cooking Instructions

Clean and wash beans

Dice Onions and add to beans
- 3
Add lots of water into pot of beans and cook till very soft

Add dried pepper and crayfish into beans and simmer for 2 minutes

Add salt to taste
- 6
Meal is ready to be served and eaten

Baracho Beans
Raised in South Texas in a family of 6, this dish was a staple growing up. It is inexpensive and oh so yummy! My mother would serve this with a batch of biscuits and there was nothing left when we were through. It is still one of my favorite comfort meals to this day.


Italian Pasta Salad
Growing up my mom would make this for me at least once a month, but she always made it with spaghetti noodles. Given that I suck at cutting noodles, I adapted. Haha. Hope you enjoy a slice of my childhood. :)


T' Jim's New Orleans Red Beans & Rice
"I love you once, I love you twice. I love you more than red beans and rice.", so they say here in Louisiana. There is a common misconception that this dish is Cajun, but in fact; it is more Creole/New Orleans that has Cajun influences. Typically back in the old days, red beans and rice were always made on Monday because that was "Wash Day" and housewives could put on a pot in the morning and let them simmer all day while they attended to the wash.


New Orleans Style Red Beans & Rice (Instant Pot)
Adapted a recipe that normally takes 8 hours and reduced it to about two in the Instant Pot. I grew up eating this meal as a staple. I learned how two previous generations fixed it and tweaked it a bit to make it mine. It tastes just like my childhood!
