You can adjust the quantities as you like, but the secret to delicious fattoush is the pomegranate molasses, which should be of good quality and in generous amounts 😍

Ingredients

  1. Tomatoes
  2. Cucumbers
  3. Lettuce
  4. Fresh mint
  5. Purslane
  6. Fresh thyme
  7. Green onions
  8. White onion
  9. For the dressing:
  10. Dried mint
  11. Sumac
  12. Olive oil
  13. Lemon juice
  14. Pomegranate molasses
  15. Salt
  16. For the bread:
  17. Pita bread, cut into squares
  18. Olive oil
  19. Sumac

Cooking Instructions

  1. 1

Cut the pita bread and fry it, then drain. Brush it with olive oil and sumac, and set aside.

  2. 2

Chop the vegetables as desired (I like the fattoush finely chopped, but you can cut it larger if you prefer).

  3. 3

    Set the onions aside.

  4. 4

In a jar, prepare the dressing: mix all the ingredients and add the white onion to the dressing. Close the jar and shake it (this way, the onion smell won't be strong when you serve the fattoush).

  5. 5

Pour the dressing over the vegetables at serving time and garnish with the toasted bread.
