Making this for my Labor Day BBQ. I love potatoes with Dijon so I came up with this recipe. My family doesn't like the texture of most onions so I chopped up the green onion very fine so they get the flavor but not too much texture.

Ingredients

  1. 5 lbsred bliss potatoes, chopped bite size
  2. 6 stripsbacon, cooked crisp and chopped
  3. Halfbunch green onion, diced
  4. 2 cupsmayonnaise
  5. 2-3 tbspDijon mustard
  6. 1-2 tbspwhite vinegar
  7. Salt, pepper
  8. 1/4 tspgarlic powder, nutmeg

Cooking Instructions

    Boil potatoes until tender enough to put a fork through. Not too mushy and not hard. This time may vary depending how small you chop your potatoes.

    Drain potatoes and run cold water over them. Then cool off in the fridge for about 30 min.

    Salt potatoes. Add mayo and stir. I suggest adding small amounts at a time and stirring until you have the creaminess you like.

    Stir in Dijon and white vinegar.

    Add salt pepper and remaining seasonings. Stir.

    Toss in chopped bacon and green onion. Mix until well blended.
