This is one of my FAVORITE side dishes since I'm usually following a low carb diet. This is sooooo yummy you won't believe the base for this rich recipe is cauliflower!

Roasted and Mashed Cauliflower

This is one of my FAVORITE side dishes since I'm usually following a low carb diet. This is sooooo yummy you won't believe the base for this rich recipe is cauliflower!

Ingredients

  1. 1head of cauliflower(mine was 1.5 pounds)
  2. 2 tbspolive oil, extra virgin
  3. 1/4 cupolive oil, extra virgin
  4. 1/3 cupheavy cream(you could use half and half but I prefer a rich cream)
  5. 1 tspchopped garlic
  6. 1/3 cupgrated parmesan cheese(I prefer the good stuff!!)
  7. 1 tbspdried parsley
  8. 1sea salt and fresh cracked pepper to taste
  9. 1/2 tspground nutmeg(its that secret ingredient that gives this dish a rustic taste!!)

Cooking Instructions

    Preheat oven to 425

  2. 2

    Place the chopped cauliflower on heavy aluminum foil,drizzle with 2 tbsp olive oil, wrap it up with more foil, place on a cookie sheet and roast in oven for 45-55 minutes.

    Remove cauliflower to a large bowl and mash as much as you can.

  4. 4

    Add all remaining ingredients and with a hand mixer beat until slightly creamy and whipped. Enjoy!!
