Ingredients

25 servings
  1. 1 cupplain flour
  2. 1/2 cupbutter
  3. 1/4 cupicing sugar
  4. 1 cupcaster sugar
  5. 1 cupdesiccated coconut
  6. 1/2 tspbaking powder
  7. 1/4 tspsalt
  8. 2 tsplemon peel
  9. 2 tbsplemon juice
  10. 1egg, beaten

Cooking Instructions

    1. In medium bowl add flour, butter, and icing sugar. Blend well, place in 8 x8 square baking pan lined with baking paper extended over edges of pan. Bake in pre- heated oven 190° for 15-20 minutes or tell light brown.

    Grate lemon, squeeze juice to get required amount in recipe.

    Beat egg

    Mix all dry ingredients,

    While base is in oven mix remaining ingredients all together, remove base from oven pour lemon mixture over base return to oven. Cook further 30 minutes. Remove from oven cut into square, roll in I in sugar, place on cake rack to cool, and set.

    When cooled store in air tight container
