My aunt makes it for her daughter who is anaemic and is advised to eat beetroot but doesn't normally like the taste of it. I too feel the same about beetroot but quite liked the taste of this rice preparation.

Ingredients

3 servings
  1. 2 cuprice
  2. salt
  3. 1/2 tspgranulated sugar
  4. 250 gramsbeetroot
  5. 1 piececinnamon stick
  6. 1 piecestar anise
  7. 1 1/2 tbspclarified butter
  8. 1 tbspcumin seeds
  9. 2 piecegreen chilli (finely chopped)
  10. 1 largered onion (finely chopped or grated)
  11. 1 mediumgrated carrot (optional)
  12. curd (optional)
  13. 1 tbspcooking oil

Cooking Instructions

    Cook the rice with a dash of salt & sugar and half a tablespoon of clarified butter

    Boil the beetroot, keep the water/ stalk, peel and grate the boiled beetroot and keep aside

  3. 3

    Take one tablespoon of cooking oil mixed with one tablespoon of clarified butter,cumin seeds, cinnamon stick and star anise and heat in a wok

    Add the green chillies, onions and carrots to sauté until onions are soft and pink

  5. 5

    Add cooked rice and grated beetroot with the stalk, mix well and let it cook for about 5 minutes

    Add salt and sugar to taste if required

  7. 7

    Serve hot or cold with curd
