This is pretty requested in our household. If you don't have fresh key limes available to you and can't find the bottled key lime juice, you can use regular limes in a pinch. Just keep in mind that they're a little more tart. Recipe Source : Sallys Baking Addiction Cookbook

Nothing says summer like the light citrus flavor of key lime pie! As we are quickly blowing through the summer season it occurred to me, I had not made a key lime pie all season. With thirty minutes to spare and not a single key lime in the house... I pulled together this delicious, gorgeous pie. The meringue is optional but gives such an improvement to the look of an otherwise lifeless looking pie. Also, I do not use food coloring (what's in that stuff anyway) but if synthetic and complicated chemical names are your thing you can green your pie up as you see fit. Regardless of pie color and meringue, this pie is a silky citrus filled treat for any occasion. I hope you enjoy.

Use only Key Lime juice. It just doesn't taste right with regular Lime Juice.

I made this often with fresh key limes when we lived in California, where we had a tree full of them. Now they are hard to get so I use regular limes fresh juice is really the best flavor with either lime! It can be made in the traditional 10 inch pie pan or in 4 -3 inch tart pans as I made in the photo for 4 individual pies

I made this recipe with two coworkers who have never baked before. About the word 'Key' in the name, it comes from the Florida Keys where it's common to find small delicious juicy 'Key' limes.For authentic key west taste you can use key limes from Florida, but I actually prefer using standard Persian limes (usually from Mexico)If you're not interested in making the crust from scratch, you can use a store-bought graham-cracker crust instead, and start at step 9.

My niece was talking about this pie she was getting and how good it was. So I decided to make one, I used to make at Devon Bar and Grill in Washington DC. It was the first job I had since graduating from culinary school. That was a long time ago. Needless to say I now make the best she's ever had.
