The sauce itself is quite oily, reduce amount of oil if your prefer. This is great over plain rice. Flavours aren't over powering but they all blend in together. Turned out really nice.

Ingredients

  1. Marinade
  2. 1 tspgarlic paste
  3. 1/2 tsphot paprika
  4. 1/4 tsprock salt
  5. 2bay leaves
  6. 1 tspcurry powder
  7. 8chicken pieces
  8. 8 mediumpotatoes, peeled and cut in half
  9. 3 tbspolive oil, extra virgin
  10. 1 largeonion, chopped
  11. 2garlic cloves, finely chopped
  12. 1 canchopped tomatoes
  13. 500 mlchicken stock or broth
  14. 1 pinchof onion salt
  15. 1/4 tsphot chilli powder
  16. 1 tspcurry powder
  17. 1 tbsptomato paste
  18. 1/2 tspblack pepper
  19. 1/4 tspground cumin
  20. 1 tspgaram masala

Cooking Instructions

    Using all the ingredients in the marinade section coat the chicken well and store in fridge until it's cooking time. Needs to be marinaded about 2 hours atleast before cooking.

    Heat the olive oil in a medium sized pan on a medium heat.

    Add the onion and garlic and cook until softened. About 3-4 minutes.

    Add the can of tomatoes, onion salt, curry powder, cumin, garam masala, chilli, black pepper and tomato. Simmer for 5 minutes.

    Next add in the chicken pieces and half of the stock and simmer for about 15 minutes.

    Add in the potatoes and the rest of the stock and simmer for another 25-30 minutes or until the potatoes are cooked.

    Add more water is its starting to dry.

    Check seasoning.

    Let it stand for 10 minutes once off the heat before serving.
