Wasabi Deviled Eggs

Needed a kick, and something else to serve with sushi besides soy beans. Dinner was great with these to start.

Ingredients

  1. 8 Eggs
  2. 3 tbspminced green onions
  3. 1/3 cupmayonnaise
  4. 2 tspwasabi paste (add less if its too spicy)
  5. 2 tsp rice wine vinegar
  6. to tastesea salt
  7. (optional) pickled ginger slices
  8. (optional) fresh pea shoots, for garnish
  9. paprika (sprinkle lightly for added color)

Cooking Instructions

    After boiling the eggs (see recipe on boiling the perfect egg.), slice eggs in half length wise. Scoop out the yolk, and place in a mixing bowl. Mash egg yolks with a fork until smooth.

    Chop green onion measure out mayo, Wasabi paste, vinegar, place into mixing bowl with egg yolks, and mix well. Taste to measure the amount of salt to add.

    Sprinkle lightly with paprika, garnish with pea shoots, and ginger slices.
