Minced beef and spinach pasta

This is an easy lunch made from ingredients that I had in my freezer.If you keep some shio-koji minced meat in your freezer you can use it in a lot of dishes and whip up something delicious very quickly. Recipe by kebeibiko

This dish was another special request from my mother, who saw something similar being cooked on TV and asked if I could make it. She failed to record the program and didn't take any notes, though, so all she remembered was that the dish was vegetarian and had mushrooms, spinach, and sour cream. The fact that she knew so little was actually a positive, as I only had to meet a handful of requirements and could otherwise do what I wanted. So I swapped out the sour cream for creme fraiche, for extra richness. And I added shallots and garlic, because I love how they work in cream sauces. And I crisped up a few slices of prosciutto, which I served on the side to meet the vegetarian condition, but would otherwise crumble on top. In the end, the dish turned out great. And it scored points with my family, which is always a nice bonus.

Since I love pasta, I'm always trying to recreate the taste found in restaurants.If you do things efficiently, you can prepare the sauce while the pasta is boiling. Asparagus, broccoli, and shrimp are also great additions.When increasing the amounts to serve more than 2 people, also increase the boiling time in Step 4 by a few minutes! For serving 1. A cheap and tasty pasta dish.

I wanted to make something new and I had a bunch of spinach and pasta so I threw this together and didn't expect it to be near as good as it was! Or to make as much leftovers as it did but it worked out great and made enough for lunch for two and another dinner for two.

Great for children and very filling!

Someone posted this on my fb feed.. It looked really good!! And it is!! I used a 17oz bag of spaghetti. It made 6 generous servings. The spinach can be fresh.However I used frozen leaf spinach.. But only half the frozen box or bag... Thawed and squeezed of water. Enjoy!!
