  1. 2 cupparsley
  2. 1 smallonion
  3. 1tomato
  4. 1/2 cupcous cous
  5. 1 smallcucumber
  6. 1 clovegarlic
  7. 1salt
  8. 1pepper
  9. 1mint
  10. 1 dashe.v.o.o.
  11. 1 largelemon

Cooking Instructions

    Cook cous cous according to directions.

    Dice fresh parslsy, tomato, onion, and cucumber till very fine.

    Add cous cous to salad after fluffing with fork. Mince garlic. Add to salad. Combine olive oil, lemon juice, salt, pepper, and mint in seperate bowl. Add to salad and toss.

    Refriderate for at least 2 hours and serve. Good with whole wheat pita and hummus.
