Ingredients

1 hour
6 servings
  1. 1/2 tspsea salt
  2. 1/2 tsppepper
  3. 2 tbspbutter
  4. 2 mediumpotatoes
  5. 6 largeeggs
  6. 1 cupchopped baby spinach
  7. 3links of organic bkfst sausage or vegetarian sausage
  8. 1/4 cupminced onion
  9. 1/2 cupshredded cheddar

Cooking Instructions

    preheat oven to 400

  2. 2

    boil potatoes . drain water when done

  3. 3

    STIR potatoes, salt, pepper, butter and onion

  4. 4

    spray glass pie plate with olive oil cooking spray

  5. 5

    mash potato mixture into pie plate to form crust @1/4" thick

  6. 6

    bake crust alone for @30 min or until brown or your desired amount of crispiness.

  7. 7

    whisk eggs together and add spinach, cooked sausage and cheese (or any desired ingredients)

  8. 8

    when crust is done cooking reduce heat to 350.

  9. 9

    pour egg mixture into pie plate and cook @30 min
