I love avocados, who doesn't? What better way to incorporate this very nutritious fruit than in a loaf?
What I love most about this recipe is the fact that I didn't use oil/butter, & milk & it still came out super moist!

Ingredients

45minutes
10 thin slices
  1. 2 cupsflour
  2. 1 cupsugar
  3. 11/2 tspbaking powder
  4. 4eggs
  5. 1 cupripe avocado, or 1 big avocado
  6. 1 cupicing sugar
  7. 1 tbsporange juice

Cooking Instructions

45minutes

    Grease & flour two small bread tins. Preheat oven.

    Whisk eggs & sugar together, talk creamy & fluffy.

  3. 3

    In a separate bowl, mash avocados till smooth. Sift flour & baking powder together. Mix the avocado into the egg/sugar mixture, & fold in flour till well incorporated.

    Pour batter into prepared tins, & bake for 45minutes or till a toothpick inserted in the centre of each pan comes out clean.

    For the glaze; mix the icing sugar & orange juice together til smooth & pour over the cooled loaf. Garnish with nuts or garnish of your choice, I've used coconut flakes in mine.
