I love avocados, who doesn't? What better way to incorporate this very nutritious fruit than in a loaf?
What I love most about this recipe is the fact that I didn't use oil/butter, & milk & it still came out super moist!

I love avocados, who doesn't? What better way to incorporate this very nutritious fruit than in a loaf?

Cooking Instructions

Grease & flour two small bread tins. Preheat oven.

Whisk eggs & sugar together, talk creamy & fluffy.

In a separate bowl, mash avocados till smooth. Sift flour & baking powder together. Mix the avocado into the egg/sugar mixture, & fold in flour till well incorporated.

Pour batter into prepared tins, & bake for 45minutes or till a toothpick inserted in the centre of each pan comes out clean.

For the glaze; mix the icing sugar & orange juice together til smooth & pour over the cooled loaf. Garnish with nuts or garnish of your choice, I've used coconut flakes in mine.

Long story short, my hubby found lots of tangerines on the countertop. He kept reminding me to eat them. But I kept forgetting. Then there’re some avocados in the refrigerator which I should finish it soon too. Then hubby asked me if I could make him a cake. I am looking for my cakes recipes. But the recipe the one I like is mandatory yogurt. Since I don’t have yogurt on hand then I replace it with smashed avocado. That’s why I named it avocado cake. The glaze is so delish, sweet with tangerine and lemon flavor. It’s perfect for coffee or teatime. So I used some of tangerine to make tangerine syrup, and tangerine glaze. I'm back on a baking kick so I thought I'd share this. This is a found recipe so I can only claim credit for the whipped cream dollop and mint leaf, though I have been known to serve it with raspberry puree as well. Oh, the original recipe called for self-raising flour instead of APF but I only have APF so I have included the baking powder and salt; if you use self-raising flour, do NOT add the salt or baking powder.
