Not too bad a soup but never tried eggplant and just realised I forgot to use up the celery. Bit of a rush tonight..You could add coconut milk at the end to jazz it up whilst it's very low calorie

Ingredients

1 hour 15 mins
4 servings
  1. 320 gramsaubergine/eggplant cubed & deseeded
  2. 60 gramsparsnip peeled and sliced
  3. 248 gramscarrots peeled & sliced
  4. 80 gramsBrown onion peeled and sliced
  5. 800 mlCold Water
  6. 1/4 tspgarlic powder
  7. 1/4 tsponion powder
  8. dashblack pepper
  9. dashground cumin
  10. dashground chilli powder
  11. dashground ginger
  12. 1vegetable stock cube

Cooking Instructions

    Add all veg to a medium sized pan

    Add water

  3. 3

    Crumble on stock cube & sprinkle all spices on.

  4. 4

    Stir, then pop lid on and leave until veg are soft. I used an 8 in 1 on 140 for 45 minutes

    Cool for few minutes, Stir then blend with a stick blender until smooth.

    Divide into 4 bowls..I got 1350 mils total of 250 calories. Serve or put into lidded containers & keep in the fridge for upto 4 days.
