Otite is an ancient delicacy made by some part of Delta Igbo during new yam festival celebration, it is usually made by family men in the community to mark the festival. I was prompted to make it today by a discussion on food festival, and I was glad I got that same old look, and guess what? It was finished within few minutes cos it was so delicious.
Cooking Instructions

Roast your yam and set aside

Fry your raw unblended melon in a dry frying pan till it turns brown

Pound your melon in a mortar

Add salt and dry pepper cut your yam into prices, then add

Add palm oil then mix together

Taste for salt then serve

Vegan General Tso’s Tofu
Wow , this is so spicy with that sambal! I suggest using 1 tablespoon , I like spicy foods and I just used 1 tablespoon of the sambal and my mouth was on fire! I think I will use half of a tablespoon next time. Other than that this was good. This is my first time cooking and eating tofu , and iam glad I did it this way, with some spice heat. Other Wise I don’t think I would of liked it.
